Easy Pumpkin Pie Cupcakes

Pumpkin Pie is synonymous with Thanksgiving. It also happens to be one of my husband’s favorite desserts. So every year I would bake those pies to bring on Thanksgiving day. A few years ago, however, I stumbled across this recipe…it is a little twist on the traditional pie and fell in love. I now make it every Thanksgiving instead of pumpkin pie. Not only was I amazed at how much it tasted like pumpkin pie, it was easy to serve and didn’t take as long to bake.
If you want to mix things up this year, this is the recipe to try. Or better yet, if you have a fixing for pumpkin pie, why wait til thanksgiving?
Ingredients
- 15 oz pumpkin puree
- 3/4 cup sugar
- 2 eggs
- 1 tsp vanilla
- 3/4 evaporated milk
- 2/3 cup flour
- 1/4 tsp salt
- 2 tsp pumpkin spice
- 1/4 tsp baking soda
- 1/4 tsp baking powder
- Whipped cream

The recipe is so easy to make. You will need two bowls to add ingredients, then mix them together and you are ready to put them in your greased muffin pans.
I have never made them with liners before, so thought I would try it. After seeing they stuck a little bit, I would probably recommend going without. The cupcakes are like pumpkin pie, so they need to be stored in the refrigerator. While being stored in the fridge, it makes the liners moist and harder to get off. I have never had any issues without liners, so would go back to that next time.
After the cupcakes are baked, they may sink down in the middle a little….that is perfectly normal. They are not light and fluffy like normal cupcakes, they are more the consistency of pie. I know the first time I baked them, I was nervous about that. So don’t worry if that happens.
Right before eating, I heat the cupcakes up in the microwave for a few seconds. Next, I top the cupcakes with whip cream, and sprinkle cinnamon. Pumpkin Pie cupcakes are delicious and look beautiful.
Don’t expect them to last long!
