Sausage and Potato Foil Packets
I think my favorite part of camping is definitely the food. I love cooking over an open campfire, life seems a little simpler. It had been a few years since my family had gone camping, but I was definitely excited to get back into it.
It had been even longer since we had tented…I forgot the challenges of having to bring everything. The hardest part is when you don’t camp very often…you don’t have special “camping” things set aside. You can’t just go grab your camping tubs and are set to go. In fact, we borrowed almost everything!
Since we will probably start camping more often, I will definitely be working on acquiring a few more things for next summer!
Sausage and Potato Packets
One of our favorite camping traditions from a while back is to make sliced potatoes in foil packets. Instead of adding hamburger to the foil packets like we used to, we thought this time we would combine the sliced potatoes with smoked sausage.
Wow, did our kids rave! They absolutely loved it and when you find something that all your kids love…you do a happy dance and don’t ask any questions!!
Making Your Packets
Start by ripping off foil for the number of packets you would like to make. I always use heavy duty foil, this helps prevent tears.
Spray the foil with non-stick spray and add a little butter. The butter is for flavor and to help keep it from sticking.
Use a mandolin slicer to thinly slice the potatoes. If you are camping, it is helpful to wash the potatoes beforehand at home.
I slice about 1 potato per foil packet. Depending on the size of the potatoes, sometimes I slice one additional potato to add a little more to each of the packets.
Once the potatoes are sliced, add lawry’s seasoning, and pepper to taste.
Then slice smoked sausage and add it to the packets. If you are camping, you can slice the sausage ahead of time. I also pre-slice some onion and brought some green beans from my garden to add to the packets.
Now to fold up the foil packets. I begin by pulling the edges together.
I fold the edges over a few times to seal the top of it.
Then I wrap the ends of the foil like I wrap a present. Now they are ready to cook!
When cooking foil packets over a fire, you want more coals than flames. We cook them 4-5 minutes on one side and then flip them over. We continue flipping them about 4 times (about 20 minutes) until they are ready.
To make sure the potatoes are cooked, take one packet off before removing all of them and poke inside with a fork. If the potatoes are tender, they are ready to eat! If they are still crunchy, then fold the foil back up and cook a little longer.
This meal is one of our favorites and is perfect for camping!
If you can’t wait, it cooks great in the oven at 350 degrees for 1 hour (no flipping needed). My friends made the great suggestion of making this on fall camping trips, which is brilliant. It is warm and hearty and would taste amazing on a cool evening in the woods!
